What's in Your Dumplings

veggie filling - carrot, sweet potato, mushroom, green cabbage, kale, cilantro, ginger, garlic, scallion, gochugaru, rice noodles (rice flour), organic tofu (organic soybeans, less than 2% magnesium chloride, calcium sulfate), tamari (soybeans, salt, alcohol), sesame oil, mirin (organic rice, salt, koji), sugar, molasses, salt

pork filling - pasture raised pork, green cabbage, ginger, garlic, scallion, tamari (soybeans, salt, alcohol), sesame oil, rice vinegar, sugar, salt

wheat flour dough - organic flour, salt

gluten free dough - rice flour, tapioca flour, millet flour, salt, xanthan gum

sauce - tamari (soybeans, salt, alcohol), rice vinegar, sesame oil, sugar

*all of our tamari is gluten free

Preparation

Dumplings have been lightly steamed and individually frozen for easy use. They are ready to be heated using any of the following methods. 

The gluten free dumplings don't have as much stretch/chew, and we recommend pay-frying for best enjoyment!  

Pan fry

Best if thawed before use. Remove from freezer and let defrost at room temp for ~30 minutes before cooking. Or, thaw in refrigerator overnight.
Add a neutral oil to skillet on medium high heat, enough to coat the bottom of pan. When oil is shimmering, place dumplings in pan and cook for ~1 min per side until golden and crispy. If dumplings are sticking, reduce heat to avoid burning and allow the side to develop a crust, then it should release from the pan. 

Steam

Place parchment paper in a steamer basket, leaving a little room from the edge.  Place dumplings in single layer. Place steamer basket over boiling water and cover. Steam for 6 minutes if frozen; 4-5 minutes if defrosted.  

Microwave -
Place dumplings in a single layer on a microwave safe plate and sprinkle 1 tbsp water on top of dumplings. Cover and microwave for 45-90 seconds, checking after 45 seconds.

The dough is delicate and we do not recommend boiling the dumplings! If adding to broth, add towards the end to gently warm them but do not boil or leave in broth from a long time.

What is UMMA Project?

If you have received your dumplings, you might be wondering what the label "UMMA Project" signifies. The name might be vaguely familiar if you knew Kim's restaurant, Kimbap. UMMA Project was the name of her tasting menu in 2018. To Kim, UMMA Project is a program that harnesses powerful feminine energy to impact positive change. 

 

The word Umma in Korean means mom. Kim was inspired by her own mom - a take-charge woman who, among other things, sold food in order to pay the adoption fees to bring her brother home. The word mom is multi-faceted for Kim, as it is for many of us. We acknowledge the loss or absence of mothers throughout our lives, while also feeling immensely grateful to have and to know so many inspiring moms, aunties, and strong mother-figures.
